South of the border

Hola!!! Today we are going to take a trip, South of the border.

Pico de gallo

RECIPE: 1 ripe tomato, diced into small pieces
1/2 red onion, diced into small pieces (Can substitute 1/2 white onion or 4 stalks of scallions)
1/4 cup of cilantro chopped into small pieces
1 Lime, squeeze juice from whole lime
1/2 spicy pepper, diced into small pieces (Optional)
1Pinch of salt, or to taste.

Make sure your tomato is ripe and does not have any  mushy or brown spots
With an adults help, dice up the tomato into small pieces

If you want your pico de gallo to have a milder taste, you can use a white onion
or for an even milder taste, you can use scallions.

Rinse cilatro well to remove any dirt that might be there. Remove stems
until you have a pile of leaves. Chop, chop and chop some more
until you have small bits.

Slice lime in half and remove the juice from both halves

Mix everything together in a bowel. Place mixture in the fridge
for 30 minutes, so that all the flavors can mix together.
Serve with tortilla chips, and Enjoy!!!

Its party time

Its Party Time My mom and I went to my friends birthday party yesterday. There was lots of food and fun games. Close to the end of the party, the kids got to take turns hitting a pinata. When it was mt turn, my friends mom put a blind fold on me. She pun me around and the told me to swing. The first time i missed but the second and third time I diddn't miss. I actually broke open the pinata and made all the candy fall out onto the ground.

After my mom and I left the party she explained to me that having a pinata at a party is a Mexican tradition. It originally was part of a religious practice. This was all very exciting to me, I enjoy the Mexican culture and I love Mexican food. Stay tuned to my next recipe. It is going to be a Mexican dish that is super easy for kids to make.

Call Me Half Pint- Healthy Veggie Wrap Video

WELCOME TO MY KITCHEN You can call me Half Pint. Today is my first time writing for my blog and I am so happy. I want to introduce myself to my readers. I am Six, yes believe it or not I am only six years old. Why write a blog at six? you ask. It just seems like fun. I like to talk and I like to cook. So that is what i'm going to do on my blog. I love making different types of food. My mom let me cook in the kitchen with her when I was three years old. I loved it. Other kids I know don't no how to cook. They think its hard work. They think that only adults can do it. I want to show them that it is not hard. If I can do it, they can too. Step by Step I will teach them what I know. Today I will be making Veggie Wraps, made with Broccoli slaw.

I used broccoli slaw that my mom bought at our local supermarket
Shredded broccoli, Red Cabbage and carrots- 2 Cups
Mayo- 1 1/2 cup
Mustard- 1 TBS & Vinegar- 1 1/2 tsp
Relish- 1 1/2 tsp
Salt- 1/4 tsp. or to taste, Pepper- 1/4 tsp. or to taste, Sugar- 1/2 tsp. and celery seed- 1/8 tsp
Mix everything together in a bowl. Scoop some of the mixture onto a tortilla. Wrap the tortilla so the mixture does not fall out. Cut into two pieces and Enjoy.
